The food we eat must be modified so it can by absorbed and used in the repair and construction of cells, for energy, and for ALL the other functions of our body. The digestive tract is actually a  long, unbroken tube from mouth to rectum. Its job can be simply defined as "Keeping Out What's Supposed to Be Out, and Allowing in What Should be Allowed in". DIGESTION IN THE STOMACH:
Protein digestion in the stomach is begun by the enzyme pepsin, initially produced as pepsinogen. Pepsinogen is released from chief cells which line the stomach and is converted to pepsin in the presence of hydrochloric acid.
 
pH AND DIGESTION:
Stomach pH should be acid; small intestine alkaline; and the bowel mildly acid again. This wide range of pH values creates difficulties for providing nutritional support of digestion.  HCl plays a crucial role in the initiation of the entire digestive cascade: 1) stomach 2) hormone activation secretin, gastrin & CCK.  HCl and pancreatic enzymes support digestive processes, but not everyone can or will take them.  Due to their unique ability to function through a wide pH range, microbial enzymes may provide significant therapeutic benefits.

As we age, we produce less and less HCl.  Since HCl is so important to the digestive process, this raises the potential for age related maldigestion. The majority of digestion and absorption takes place in the duodenum, the first portion of the small intestine. The pancreas and the liver a key organs influencing digestion in the small intestine, producing pancreatic enzymes and bile.  Pancreatic enzymes include 1) Protease 2) Lipase 3) Amylase.  Proteases for digestion of protein are 1) Trypsin 2) Carboxypeptidases 3) Chymotrypsin 4) Aminopeptidase. It used to be believed that protein was completely digested (down to amino acid size) and that absorption of molecules larger than single amino acids was rare.  Increased absorption of large protein molecules has been linked to a number of health problems, ranging from food allergies to autoimmune disease.
